This is a live cooking course with a French Chef who will work at your own pace to teach different techniques used to prepare one dish. You must buy your own ingredients. Any level or age is accepted and anyone can cook like a chef! Families cooking together are welcome. Recipe is listed below and if you have any questions please email bureau@afsandiego.org.

Floating Island, Crème Anglaise and Salted butter Caramel

Floating island:

  • 220g Egg white *Room Temp (about 5 eggs, keep the yolk for the Crème Anglaise) 
  • 100g Sugar
  • 30g confectioners’ sugar 
  • Half Vanilla beans. Paste, liquid works 

Crème anglaise:

  • 0,5L Milk
  • 90g Sugar
  • 5 Egg yolk 
  • Half Vanilla beans or paste, liquid

Salted butter Caramel:

  • 160g Heavy whipping cream 
  • 100g Sugar
  • 50g Salted butter (unsalted works)

Optional: Your favorite Berries! 


1 Small pot / 1 Strainer / 1 Spatula / 1 Whisk / Spoons / 1 Knife / 1 Cutting board / 1 Baking dish / ice / 1 Medium mixing bowl 

For the Floating Island you will need a robot mixer like KitchenAid, OR an electric whisk, you can also use a basic whisk BUT you’ll need a strong arm 😉
